Slow-Roasted Tomatoes

This is truly one of the easiest and most delicious tomatoes recipes in existence!! And versatile, too! I use Roma tomatoes for this recipe and it has never failed me. I almost always cook the tomatoes overnight- this is one of just a few recipes I can get motivated to make at 9:00 PM or later! And the reward? A wonderful batch of roasted tomatoes and a kitchen that smells oh-so-good!


Slow-Roasted Tomatoes



12 Roma tomatoes (try to use tomatoes that are similar in size)

2 tablespoons olive oil

½ teaspoon dried basil

½ teaspoon dried oregano

¼ teaspoon freshly ground black pepper



Halve the tomatoes lengthwise and place in a large bowl. In a small bowl, combine the olive oil, sugar, salt, basil, oregano, and pepper. Add the olive oil mix to the tomatoes, and stir until the tomato halves are coated. Place the tomatoes, cut side up, on a baking sheet.Slow roasted tomatoes3 Place the baking sheet in 200 degree oven, and slow roast for 7-8 hours (one time I totally forgot about them in the oven, and they were still delicious after baking for 9 hours!).


The tomatoes are delicious straight from the oven, and you can store them in the refrigerator for up to a week. I think they taste best at room temperature. Serve them as a delicious side dish, or add them to omelets, sandwiches, salads, or soups. Simply use a blender to turn them into a tasty tomato sauce. Once you see how easy this recipe is, you’ll keep it in your pile of “go-to” recipes! Added bonus: it’s healthy and delicious, too!
